Leek and Bean Cassoulet with Biscuits, from Veganomicon

This is probably one of my favorite recipes from Isa and Terry's book Veganomicon. (You like how I call them "Isa and Terry" like we're buds or something?) I confess that I usually call it "biscuit stew" so my toddler understands! I stick to the recipe whenever I make it, but I have omitted the leeks once because they were unavailable. I also tried using the optional seitan one time, but I actually prefer it without (even though I love seitan). 
It's the prefect meal for chilly days like this one! 

If you don't have Veganomicon, you should really consider buying it! It's a great book to have, whether you're a brand new vegan or been one for years.

  1. Mmm... I have this on my menu this week but I forgot to get leeks at the grocery store. Oops. It's such a perfect chilly-day meal. Bon appetit!

  2. I have made that recipe before, and really enjoyed it! (Except that I didn't use a large enough skillet, and the cassoulet overflowed all over my oven. Drat.) Really, anything with biscuits or dumplings is a hit at my house!
